Still working on it the stuffing but the concept works very nicely and frankly anyone can do their own stuffing but I thought I'll share as it's a nice way to use this unwanted weed,. Common mallow Malva neglecta , also called cheeseweed is plentiful locally at this time of the year, it's often used in the Middle East to make a delicious soup.
I took some leaves and blanched them for a minute in my forest vegetable stock see previous posting then set them aside. Next I made a stuffing composed of chopped chickweed, onions, bur-chervil, acorn flour, wild oats grain, chia, oyster mushrooms, Italian herbs and using my stone grinder molcajete created a rough paste which I shaped like tiny burgers. Note that you can do whatever stuffing you want, plant-based or not.
I cooked the mini burgers then placed one on a mallow leaf. The idea is to place another mallow leaf on top and make sure it sticks so it's a "ravioli". I tried a couple of techniques and settled on making a sticky paste with chia seeds in my stone grinder.
The sticky paste was applied to the leaf and stuffing then I placed another leaf on top. Worked nicely. I'm sure Xantham gum could even work better but I like to use stuff I forage. I then placed a generous amount of avocado oil in a pan to high heat and pan-fried the mallow ravioli for a minute or so. It was beautiful - the sides were nice and crispy, the center was moist and green. I think you could apply the same technique to many "wild" edible large leaves.
To serve it, I poured a bit of my forest vegetable stock in a small dish and added the mallow ravioli and a few mustard flower pods. Simple presentation. Super yummy and such a nice way to use close to 8 unwanted weeds and turn them into gourmet food. I'll post a final recipe soon and a better presentation of the final dish.
